Josophan’s fine chocolates are handcrafted onsite in Leura, in our signature store incorporating a boutique store, workshop/tasting room and production laboratory. Our chocolates are freshly made using Fair Trade certified chocolates and fresh flavour infusions, and without the use of artificial flavours or preservatives.

Description

The underpinning philosophy at Josophan’s Fine Chocolates focuses on quality without compromise, with the use of fresh, natural, local wherever possible and ethically-sourced ingredients being paramount. The fine chocolate ganache fillings are flavoured by infusing fresh cream with ingredients like fresh mint leaves, basil leaves, lime, orange, Tahitian vanilla bean, saffron and locally-roasted coffee beans. The fillings are fresh and therefore have a shelf life more like a patisserie product, rather than a long supermarket shelf life product, and are best eaten within seven days. The chocolate used in the creation of Josophan’s products includes Fair Trade certified Callebaut Belgium couverture chocolate, Single Origin and Single Plantation chocolates and ganache fillings made with fresh flavour infusions. Simply fresh, naturally-flavoured, luxurious chocolates. The founder and owner of Josophan’s is Jodie Van Der Velden, who opened the first store in Leura Mall (now Café Madeleine, our sister property) in 2005. Jodie has since won multiple awards for her chocolates, including Overall Champion Exhibit at the Sydney Royal three times. Whilst Jodie leads the way for Josophan's, a team of committed and highly skilled chocolatiers handcrafts chocolates day to day in the Leura production laboratory, which can be viewed from the Leura boutique.
