Hillbilly Cider



Sample the range of award-winning cider made from locally-grown, 100% crushed fruit made with minimal intervention at the Hillbilly tasting shed on Bells Line of Road.


A move to an orchard in Bilpin over a decade ago was the inspiration for winemaker Shane and his wife Tessa to create this local favourite Blue Mountains cider. With 20 years of wine and cider making under his belt, including time spent working in cider regions around the world – Shane has created a range of internationally award- winning alcoholic and non-alcoholic ciders. Hillbilly is also the only cider company in the world to use the ‘Julie’ apple – a chance seedling discovered growing at Shields orchard. Available locally in bars, restaurants and bottle shops as well as further afield in Sydney, Melbourne and Brisbane. It is worth dropping into the cider shed in Bilpin for a taste straight out of the barrels, overlooking the apple trees at Shields Orchard. The Hillbillies are currently building a new cider shed experience right next door – with a larger tasting area overlooking the barrels and tanks and a commercial kitchen so a bite to eat can be part of the ‘Hillbillification experience’. The new shed is set to open in early 2020, and will offer limited release ciders not available elsewhere.
